This was such a great weekend! It was such a relaxing weekend which was so nice considering Kyle had a tough week at work and next week for me is going to be long! The kids start back next week, all 24,000. Can you believe that in the small little county of New Hanover, there are 24,000 little ones starting back to school next week?? Maybe I'm crazy but it sounds like a lot of responsibility to me. A lot of opportunity to impact too! I was telling someone the other day that I LOVE my summers off. I really love my summers but come August it's almost like you are starting a new job again. Not that you don't know the routines but just that you always hit the ground running. My nice leisurely mornings with Ellie and a cup of coffee turn into shoveling my oatmeal down, drying my hair and getting dressed all at the same time while realizing I'm actually running late. It's just so hard to get up any earlier than I already do. All this to say, I'm back to the life of REALLY enjoying my weekends! Kyle and I didn't have much to do this weekend but a few get-togethers so today we hit up the grocery store to stock up on our Emealz ingredients and a few things to grill. Tonight we grilled up some yummy pineapple and chicken kabobs. They were so delicious. I think Kyle and I said "this is so delicious"' to each other like 1,000 times by the end. The Emealz recipe called for a balsamic dressing marinade but I was feeling more of a sweet-soy marinade.
So here's what we used for the marinade:

1/2 c. soy sauce
1 c. pineapple juice
1/4 c. brown sugar
1/8 tsp. garlic powder
1/8 tsp. onion powder
1/4 tsp. ground ginger
1 1/2 tbsp. lemon juice
1 c. pineapple juice
1/4 c. brown sugar
1/8 tsp. garlic powder
1/8 tsp. onion powder
1/4 tsp. ground ginger
1 1/2 tbsp. lemon juice
Then I cut up the chicken (cubed), red and green peppers, onions and pineapple. After it marinaded, we skewered them and threw those bad boys on the grill. The husband did a pretty great job because the chicken was cooked to perfection, which is sometimes hard to do on our little charcoal grill.
I paired the kabobs with a little couscous that we had on hand instead of the usual rice and it was a great meal and pretty healthy. By the way, couscous is my new obsession. Love it!
